Gluten - Free Granola

I generally really dislike cereal, granola and museli, and have been avoid eating them most of my life. So I decided to make one that I would actually enjoy eating. The main criteria was no oats and no raisins, I really can't stand them, when I was given them as a child I would gag, so eventually my mom stopped feeding them to me. The granola turned out great, I actually really enjoy eating it! I have been using So Delicious coconut milk instead of milk which is really tasty alternative to milk.


approximately 5 breakfast servings, prep 10 min, cook 1 hour
2 cups puffed rice (I used Rice Krispies)
1 cup rice bran
1/4 cup unsweetened shredded coconut
1/4 cup sliced almonds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup apricots sliced

2 tablespoons honey
2 tablespoons maple syrup
2 tablespoons cashew butter or almond butter
1 tablespoon olive oil

Pre-heat oven to 120°c (350°f)
1. Mix honey, maple syrup, cashew butter and olive oil. If necessary, heat mixture in microwave for 30 seconds on medium power to aid mixing (only do this if necessary).

2. In large bowl mix puffed rice, rice bran, coconut, almonds, sunflower seeds, pumpkin seeds and apricots.

3. Pour in wet mixture stir until the dry ingredients are coated.

4. Evenly spoon mixture onto baking tray. Place in oven, every 20 minutes stir mixture.

Let cool in oven, keep in sealed container for up to 2 weeks.
