Breakfast tacos with avocado salsa - gluten free
When trying to be gluten free is pretty difficult when trying to eat out for breakfast. Ordering eggs without toast kinda sucks and if you order extra potatoes with your breakfast in Hong Kong it seams
like half the restaurants give you an extra sad hash brown....which is defiantly from the freezer section. (I swear half the restaurants order them from the same supplier). Soooo i kinda prefer cooking breakfast at home, also that means you can stay in your pjs.
Serves: 2 Preparation Time: 15 minutes Cooking Time: 10 minutes
Avocado Salsa
1 shallot, finely chopped
1/2 fresh jalapeno
5 cherry tomatoes
1 avocado
Lime
1 radish
1. Finely chop shallot, jalapeƱo.
2. Chop cherry tomatoes into pieces.
3. Cut avocado in half remove seed and slice into cubes and scoop out avocado out of skin.
4. Juice lime, remove seeds.
5. Slice radish into very thin rounds.
6. Mix all ingredients together in bowl
Breakfast Tacos
4 corn tortillas
(good corn tortillas can be hard to find in HK, i picked the Reser's Fine Food Yellow corn tortillas at Oliver's in Princes Building)
4 eggs
olive oil
Avocado salsa
freshly group salt and pepper
1. Warm tortillas in frying pan for about 30 seconds each side, keep warm in tea towel.
2. Heat oil in skillet, fry eggs either sunny side up or flip if desired.
3. Lay warm tortillas on plate, place fried egg on top and spoon avocado salsa on top.
4. Season with doe freshly group salt and pepper.
5. Enjoy :)
