One Bowl Chocolate Chip Banana Bread


Old brown bananas? Time to make banana bread or is it called banana cake? We seem to have this discussion every time I make banana bread...Ollie insists its called cake, I say its bread! After a quick google we still cant quite decide.

Although clear examples of the difference between cake and bread are easy to find, the precise classification has always been elusive.[3] For example, banana bread may be properly considered either a quick bread or a cake.

What do you think? Until I find a better description I am calling it bread, after all I am the one who is baking it! ;)

Preparation Time: 10 minutes
Cooking Time: 50 minutes

Ingredients:
2 brown bananas
1/2 cup vegetable oil
1/4 cup honey
1/4 cup maple syrup
zest of whole lemon
2 eggs
1/2 cup almond meal
1 1/2 cup unbleached flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips

1. Preheat oven to 180*C.
2. Mash banana with a fork in the bottom of a large mixing bowl.
3. Add vegetable oil, honey, maple syrup, lemon zest and eggs, mix until incorporated.
3. Stir in almond meal, flour, baking soda and salt.
4. Fold in chocolate chips.
5. Line loaf pan with baking paper and pour in batter. Bake for around 50 minutes or until tooth pick comes out clean.
