Saturday Morning Warm Berry & Chocolate Chip Muffins

This morning I couldn't quite decide if I should make muffins or crepes, I just wanted to avoid having to go to the grocery store. I decided on muffins, we were in Japan last week snowboarding in Furano Hokkaido and we had savoury muffins at the end of most days with a beer and it reminded me I had not made muffins in ages.
I didn't have the ingredients for savoury muffins so I made berry and chocolate chips you could use any berries in them I used a combination of blueberries and blackberries because thats all I had in the fridge. Preparation Time: 15 minutes
Cooking Time: 25 minutes (per muffin tray)
Cooking Temperature: 350°F 180°C
Makes: 20 muffins

Ingredients:
1/2 cup vegetable oil

1 cup sugar
1 teaspoon vanilla
3 eggs
3/4 cup buttermilk (or mix 3/4 full cream milk with 1 teaspoon vinegar and let sit for a few minutes before you use)
2 3/4 cup flour
1 cup almond meal
1 Tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup mixed blueberries and black berries
1/2 cup chocolate chips


  1. Mix all wet ingredients together. 
  2. Mix all dry ingredients together. 
  3. Gently stir wet and dry ingredients until combined. 
  4. Gently mix in berries and chocolate chips.
