Carrot Cake

As fall approaches - well, as fall approaches in Hong Kong - it's still about 25°c each day! My boyfriend and I love to go camping, and I always like to try and bring along some sort of baked goods; what is better than Carrot Cake? Yum... This cake is so easy to make; you can make it either as a cake, or as cupcakes.


Carrot Cake

1 cup sugar
3/4 cup vegetable oil
2 large carrots (grated)
1/2 teaspoon vanilla
2 eggs (beaten)
1/2 cup raisins (optional)
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1 1/3 teaspoons baking powder
1 1/3 teaspoons baking soda
1/2 teaspoon salt

Combine top 6 ingredients.  Sift together flour, cinnamon, baking powder, baking soda and salt. Gently combine wet and dry ingredients; pour into 8x8 inch pan.  Bake for approximately 1 hour at 150°c (300°f).


Icing
2 tablespoons butter
1/4 teaspoon vanilla
4oz. cream cheese
1 cup icing sugar

Cream butter, cream cheese and vanilla together;  add icing sugar. Ice cake when it is still warm in the pan.
