Fresh Mozzarella Salad

¼ English cucumber
18 cherry tomatoes
1 fresh mozzarella
10 leaves fresh basil
freshly ground dried Szechuan chili pepper flakes
freshly ground black pepper
sea salt
extra virgin olive oil
balsamic vinegar
- Cut cucumber into thin rounds; lay approximately 8 on center of plate in a circle.
- Cut cherry tomatoes in half and pile on top of cucumbers.
- Cut mozzarella into 6mm thick rounds and then cut in half; place on top of tomatoes.
- Roughly chop basil and sprinkle on top.
- Drizzle olive oil and balsamic vinegar on top. Sprinkle chili flakes, freshly ground pepper and sea salt on top.
- Serve immediately.
