Fresh Mozzarella Salad

This salad is very quick to make and tastes amazing; the chili adds an extra kick. I made this the other night for my mom and the boyfriend. We had this as a starter followed by barbecued prawns and sausages. For the chili flakes we ground up dried Szechuan chili peppers, but you could use any hot dried chili pepper for this recipe.

Fresh Mozzarella Salad

Prep time: 10mins
Serves: 3 

Ingredients: 
¼ English cucumber
18 cherry tomatoes
1 fresh mozzarella
10 leaves fresh basil
freshly ground dried Szechuan chili pepper flakes
freshly ground black pepper
sea salt
extra virgin olive oil
balsamic vinegar

  • Cut cucumber into thin rounds; lay approximately 8 on center of plate in a circle. 
  • Cut cherry tomatoes in half and pile on top of cucumbers. 
  • Cut mozzarella into 6mm thick rounds and then cut in half; place on top of tomatoes.
  •  Roughly chop basil and sprinkle on top. 
  • Drizzle olive oil and balsamic vinegar on top. Sprinkle chili flakes, freshly ground pepper and sea salt on top. 
  • Serve immediately.
