Fresh Rice Paper Beef Rolls



I love Vietnam, the food is awesome fresh healthy amazing, I have visited Vietnam 3 times and discover something new every time I visit. One the best Vietnamese dishes to make is fresh spring rolls you can make them with almost any fillings, whatever is fresh is great.  Today I used beef today, but I have made them with prawns, chicken, fish, pork or vegetarian.  In Vietnam I have had the rolls with Vietnamese Sausage and Soft shell crab.

Beef 
300g Beef
1 Teaspoon Chili flakes
3 cloves Garlic
1 Teaspoon Sesame oil
Salt & Pepper

Filling 
100g Vermicelli rice noodles
22 cm round Rice Paper wraps
1 large Carrot
1 Capsicum (pepper)
12 Snow Peas Pods
1/2 Red onion
4 Spring Onions
Fresh Basil
Fresh Mint
Fresh Cilantro

1. Marinade beef, and quickly fry in frying pan until medium rare.  

2. Its all about how you cut the the vegetables, the thinner the better, and the easier it is to roll in the rice paper.  So thinly slice, carrot, capsicum, snow peas, red onion, spring onion.  

3. Place Vermicelli in bowl and pour boiling water over noodles, let sit for about 5 minutes and drain.

4. Now your ready to assemble, get a large bowl with warm water in it, quickly dip 1 rice paper wrap, and put wrap on plate fill with ingredients, fold over one side, then fold in both ends, and roll (see photos).  Start again....

You can use a variety of dipping sauces, I used the dressing (Nuoc Mam Cham) from the Green Mango Salad recipe.  But you can also use sweet chili sauce or Hoisin Sauce mixed with lime juice and chili.  Enjoy!
