Quinoa Beef Salad

I have never cooked Quinoa before but we had a bag of it in our cupboard that a friend bought so I decided I would try to make some Quinoa Salad.  I made the salad with an assortment of food that we had in the fridge and the freezer...   It worked out wonderfully the lime and herbs give the salad a refreshing taste.


Try to cook Quinoa in advance so that it can cool, I had to put the Quinoa in the freezer to cool because I made it a bit last minute.

serves 4, prep 30 min, cook 10 min
1 1/2 cups Quinoa
1 Teaspoon Oil
1/2 Red Onion
300g Ground Beef
1 Teaspoon or more Szechwan chili flakes
Salt & Pepper
2 Cloves Garlic
12 Green Beans
150g Spinach
Juice of 1 lime
Fresh Basil
Fresh Mint

Cook quinoa, as instructed on packet, let cool.
Chop onion, mince garlic saute for 4-5 minutes, add ground beef, chili flakes, salt and pepper stir, saute until beef is cooked.  Add chopped green beans, and finely chopped spinach to beef cook until spinach is wilted.  Let cool for a few minutes then add to the cooked Quinoa.  Roughly chop herbs, and juice lime.  Add herbs and lime to Quinoa and stir, serve enjoy.
